Hardcover. Very good. Scarce offprint of this important article, first published in the Journal of American Folklore, Jamuary-April 1895. pp 41-72, in original wrappers bound in to a modern cloth binding. Cloth lightly soiled, chip missing from rear wrapper, soiling to last page, but still very good overall, with Ink stamp reading "John G. Bourke, Captain Third Cavalry, U.S. Army, Fort Ethan Allen, Vermont"' on first page. As an aide-de-camp to General George Crook in the Southwest, Bourke took extensive notes on Indian tribes and local folklore. In this essay he discusses native plants and foods that can be derived from them, but also takes the then-uncommon approach of writing about food and cooking from the point of view of a folklorist, calling attention to regional variation and to the historic origins of different cooking practices.
